H.J. Heinz Co.’s “Vinegar Works” in Holly, Michigan — a rail-side factory complex shown on a postcard-style photo labeled “#57.”

The tracks curling past the buildings are a clue to how this place worked: bulk ingredients in, finished goods out, all by rail. Newspaper reporting from 1896 says the Heinz company planned to take over the defunct Holly Vinegar & Preserving Co. plant, tying the village to a national food brand.
